How can I plan and prepare for my next job while ensuring these challenges don’t take a toll on my mental health?

If you really need space and time and have the money to pay for rent/mortgage for a few months, you can try applying for FMLA & using that leave to study for your next job.

The vast majority of the time, engineers switch jobs without having a gap in employment, i.e. they have their next offer teed up while they are working at their current job. Are you not able to do that? It's certainly tough, but it's possible. You'll need to carve out some time after work and on weekends and save some PTO days for the onsite/final round interviews.
When it comes to succeeding in what is effectively "survival" mode, there are 2 components:
